All of our entrees come with your choice of salad and side dish, and include plates, napkins, and utensils. Custom orders and menus are gladly considered. Please call us to discuss your needs. All prices quoted are per person, buffet style service. Sales tax and gratuity not included. We never add a gratuity to our invoices. In many parts of the south, The Carolinas, Missouri, and Tennessee for example, pork is barbecue. Pork is perfect for the smoker, as it is always juicy and tender. Our special seasonings accent the flavor of the meat. Great barbecue always tastes great on its own. If the meat doesn't have the barbecue flavor you long for, no amount of barbecue sauce will make a difference. Our sauces are merely a complement for those that enjoy it. Smoked Pork Loin with Pineapple Salsa Smoked Caribbean Tenderloin Get out your Hawaiian
shirt and the cool shades. This tender and delicious cut is marinated in
fresh lime juice, chutney, ginger and garlic, then rubbed with our zippy island
rub and smoked to juicy perfection in our pit. Served with a nice black
bean salsa. Carved at your buffet. Airfare to the islands and
lodging not included! Double Smoked Pit Ham with Bourbon-Mustard Glaze Our
lean, tender and juicy ham cooked in the pit over a maple wood fire and basted
with our special bourbon and stone ground mustard glaze to bring out the
sweetness of the meat. Hand carved at your buffet line. In Texas, beef is king. If you were invited to a backyard barbecue in Austin, they wouldn't be serving burgers and hot dogs seared on a grill. It would most likely be brisket, smoked low and slow over a mesquite fire. We offer a delicious, albeit unique version of this Texas classic, and several other choices to tempt your taste buds.

Our brisket is
Mesquite smoked for hours, then braised slowly in a Guinness Stout-based braising
liquid in our pit. A dripping mouthful of saucy heaven! Thinly sliced cross

more casual events, we’ll serve it on a warm bun if you like. Barefoot Beef Ribs
These are big 'ol dinosaur bones that would make Fred Flintstone
happy! Rubbed in a nice marjoram based rub with a hint of brown sugar and
smoked low and slow in the pit. We then transfer them to a pan and braise them
in our own barbecue sauce and

Cabernet wine until they are tender and absolutely delicious! If you like beef

The Baron
Tender, succulent Baron Of Beef Roast injected with our special marinade, rubbed
with spices, smoked medium-rare, and carved at your service table. Fabulous and
elegant! Prime Rib of Beef
You’ve
never tasted barbecue heaven like this! Rubbed with our own prime rib spice and
slow smoked over Mesquite in our pit. Wow! A true slice of Salvation! Served
medium-rare with
au jus and fresh
horseradish sauce.
Many people have told us this is the best Prime Rib they ever tasted. Carved at
your service table. Rosemary Tri-Tip
We marinade this fabulous cut of beef in our special marinade
with finely chopped fresh Rosemary, then smoke it to medium rare in our pit. Smoked Tri-Tip Santa Maria Style
This is the authentic style of beef barbecue that originated over
100 years ago during California's
Rancho heyday. Hand rubbed with our authentic spices and slow smoked to medium
rare in the pit. Served with a mild salsa, small red beans, our homemade
macaroni and cheese, hot French bread and a crisp green salad. Carne Asada
A Mexican favorite, we take the finest choice beef Tri-Tip,
marinate it in our special marinade, and smoke it to medium-rare in our pit.
Thinly sliced cross grain, and served with pan seared bell pepper and sweet
onion, Crema Mexicana (Mexican style sour cream), our homemade Pico De Gallo
salsa, sliced jalapeno peppers, warm tortillas, black beans, and a cool, crisp
green salad. So tender you won't need your teeth! Truly something different
for your event, and sure to delight your guests! Butterflied Leg Of Lamb
Tender boneless leg of
Lamb, marinated with extra-virgin olive oil, fresh Rosemary and garlic.
Smoked medium-rare in our pit. If you enjoy good lamb, you're going to
love this! Consider, if you will, the lowly chicken. Just like Rodney Dangerfield, chicken don't get no respect! In our speaking, being compared to a chicken is an insult. If you don't know quite how to describe the flavor of another food, what do you say? "It tastes like chicken." We prefer to look at it a little differently. Chicken is quite content to take on any flavor we want to achieve. Through years of experimentation, we have found a blend of herbs and spices that we believe perfectly complements the flavor of chicken. We know people who constantly flip those poor chicken parts around on the grill like they were playing hockey or something. We play with the fire, not your dinner. One turn, maybe. Well seasoned and smoked in our wood fired pit, it comes out tender and juicy and ready for you to enjoy. We will never serve you undercooked chicken. While we are diligent in our use of thermometers, please be aware that meat cooked in a smoker will take on a pinkish hue that can extend 1/4-1/2 inch into the meat. This is normal, and is not an indication that the food is undercooked. Pit-smoked Chicken

favorite. 5 Spice Cornish Hens
A generous 1/2 hen per person, marinated in our special blend of
soy, sherry, and Chinese 5-spice seasonings. Slowly smoked, juicy and
flavorful. Jerk Chicken
Rubbed with our special
Jerk paste and marinated for hours, this spicy little number boasts all the
traditional flavors of Jamaica. We'll tone it down or heat it up, which
ever you prefer.
Fish When our ancient ancestors peered into the nearest lake or river and saw fish swimming beneath the surface, they decided they should eat them. Thus began the timeless tradition of chasing after scaly creatures with stick, hook, and line. But many people are more confident catching fish than cooking them on their barbecue. Fish lends itself perfectly to cooking in our pit, or in the fish fryer. Since fish is very high in water content, it cooks up quickly, so the most important thing is to pay attention to your food. We are certain you will find the following offerings and our efforts to be to your liking. We've heard from many that it's the best fish they ever tasted.
Southern-Fried Catfish
Generous portions of
fresh Catfish fillet seasoned with a Mississippi Madcap blend of spices. Our
good friend Dwight finally gave us this recipe, and the Southern style we
learned from him lives on! We know you’ll
love it! We have these farm raised fillets air freighted in for the freshest
fish you can get. One
taste and you’ll be smelling the Magnolia blossoms and whistlin’ Dixie! Served
with our homemade Tartar sauce.
Northwest
Salmon
The freshest Coho or
King Salmon fillets lightly seasoned to enhance the delicate flavor, then Alder
smoked to Northwest perfection! Subject to market availability. We never serve
"farm raised Atlantic Salmon!" In the Northwest we all know the difference.
If we can’t get incredibly fresh local fish, we won’t serve it! Can't decide what to order? These combinations might make your choice a little easier. Several main course dishes will insure that everyone at your party gets something they will truly enjoy! Chicken and Ribs

Feast
Our Chicken, Pulled
Pork, and handmade Andouille Sausage team up to deliver an authentic taste
sensation from the old south. Served with corn bread, our special coleslaw, and
your choice of side dish. Come
and get it! The Luau
Close your eyes and think of white sand, the sound of the ocean gently lapping
at the beach, and palm trees waving in the warm tropical breeze...then indulge
yourself in this feast! We'll start you off with our Jamacian style pepper
prawns, then serve up a fabulous lobster salad, our marinated Jerk style chicken
with Mango Chutney, Five spice pork spare ribs with our special orange-chipotle
glaze, rice pilaf, and a beautiful array of fresh fruit. Chase away those
winter blues! Baron and Bird
Our succulent baron of
beef teamed with either of our wonderfully smoky chicken entrees.
We'll carve the beef at your buffet and serve it up with our zippy horseradish
sauce and au jus.
Bring your appetite! Chicken and Sausage
Smoked chicken and our spicy handmade Andouille sausage links. Served with
buns, Creole mustard, coleslaw, and barbeque baked beans.

Cocktail Fresh Vegetable crudités with Roasted Red Pepper Dip
Crisp, fresh hand cut vegetables with our delicious dip made from
sour cream and fire-roasted red bell peppers. Smoked Pico de Gallo Salsa with tortilla chips
We smoke fresh Roma tomatoes and fresh jalapeño peppers over an
apple wood fire to make this truly kicked up salsa, with white onion, cilantro.

Tender young Zucchini and red onion
grilled and tossed with cherry tomatoes, Kalamata olives, sun-dried tomato and
fresh mint, dressed in Extra-Virgin Olive oil, fresh lemon juice and fresh
herbs. Lobster Salad A favorite of ours, this beautiful salad boasts rich colors and exquisite taste. Based on a traditional Maine recipe with tender celery and a creamy dressing, we serve it well chilled for you on a bed of fresh greens. There is an extra charge of $1.00 per person for this one.

Peppermint Bark Everyone loves our premium boxed lunches. Why settle for over-processed "deli" meats, formed and chopped beef or chicken, and bland vegetarian choices? We custom smoke our meats and slice them thinly, then pile them high on your choice of fresh bread. Our vegie sandwich is the best any where! A basic box lunch includes a large sandwich, bag of chips, can of soda or bottled water, large cookie, and condiments. For a more deluxe version, add a cup of potato or maccaroni salad, fresh fruit, pickle, what ever you like (at additional charge). We'll deliver your lunches on time to your specified location.

Portobello Sandwich All sandwiches are nicely boxed with a large cookie, bag of chips, mustard, mayonnaise, knife, and napkins. Choice of soda or bottled water included. Sandwiches available on white or whole wheat deli bread, generous size with 4 oz of meat per sandwich. We custom roast and smoke all of our meats from Western Meats in Tumwater with no added preservatives or fillers. We truly believe you can't buy a fresher, better boxed lunch anywhere! Give us a try at your next meeting or event. No delivery charges!
Fine China and flatware Ivory fine china with a
simple gold band, dinner plate, dessert plate, coffee mug. Bid per event. Please call for details. Above prices apply to events of 50 people or more. We do make accommodations for smaller groups. Please contact us to discuss your specific situation. A 50% deposit is required with our signed contract, and subject to all terms and conditions contained therein. We will gladly give our consideration to your requests for custom orders or menu items, and will make every effort to fulfill your desires.
