Our barbecue pit ("Bessie") was custom made by Klose
Barbecue Pits in Houston, Texas. Their pits are hand made, with no
machinery used in their manufacture except a welding machine. Klose pits
are recognized around the world as the finest in the industry. The entire
unit is constructed with 1/4 inch steel plate, which provides excellent heat
retention, so important in the cool weather we have in the Pacific
Northwest. It takes about an hour to heat it to proper cooking
temperature. The pit is heated by a wood fire built in the firebox at the
rear of the unit. The heat (and lots of smoke!) flow through the 30- inch
diameter main cooking chamber, up through the warmer box at the end, to the dual
smoke stacks up front. We typically burn Alder, Maple, Apple, Cherry, and
Mesquite, depending on what we are cooking, or a mix of several of the
above. The pit is permanently mounted on a tandem axle trailer, and weighs
4,500 pounds! The pit is a real joy to cook with, and draws a crowd of
curious on-lookers every where we go.
